The elegant pairing of veal and tuna make vitello tonnato, shared by Pugliese chef Giuseppe Fuzio (Chiosco). Chef Martin Benn (Sepia) creates food as art as a tiger prawn morphs into a silky single sheet served with umami-rich broth made with the world’s most expensive jamon iberico.
