Sake, originally offered to the deity in prayer for rich harvest, is made from rice, staple food of Japanese, grown by fertile land and clear water by masters called Toji, who, for generations, have controlled fermentation process since the days when mechanism of microbes was not known. Making of sake keeps to tradition, yet continues to evolve. Come visit breweries in Hiroshima, Kyoto and Akita.
